This is my go-to recipe when I have over-ripe bananas. With no added sugar (unless you decide to add chocolate chips!) this banana bread recipe is not only simple. but healthy too. I’ve made it at least 50 times and it’s beyond delicious every single time! Slather with some butter and pair with a cosy cup of coffee x
3 over-ripe bananas
3 large eggs
squeeze of lemon juice or apple cider vinegar
1/4 cup coconut oil or olive oil
pinch of salt
1/2 tsp cinnamon
1 tsp baking powder
1 tsp bicarb soda
1 heaping cup of wholemeal spelt flour
1/4 cup of chocolate chips (optional)
Preheat oven to 170C and grease a loaf tin
Wisk the bananas and eggs until well mixed
Add a squeeze of lemon, the oil, cinnamon, baking powder, bicarb soda and mix well
Add the spelt flour and mix until just combined
If adding chocolate chips, gently fold in taking care not to overmix the batter
Bake for 35-40 minutes until lightly brown on top and cooked through
